Homestyle Japanese cooking demystified

Debra Samuels, a longtime resident of Japan, demystifies Japanese homestyle cooking in "My Japanese Table." Included are such favorites as sushi (including hand-rolled sushi and chirashi-zushi), skewers (grilled mixed veggie and tofu, chicken), donburi (one-dish meat and rice bowls), okonomiyaki (cabbage and egg "pancakes"), and a whole chapter devoted to bento, ornate Japanese lunchboxes prepared according to a strict balance of colors, flavors, and ingredients. I liked the photos of Debra's chrysanthemum bento box so much that I ordered an identical one from Japan!

"My Japanese Table" is a perfect starting point if you're new to Japanese cooking; it's not as intimidating or complicated as other Japanese cookbooks, and it uses commonplace American supermarket ingredients whenever possible. The vibrant photography and clear font make it especially easy to read and cook with. The thorough intro on Japanese cuisine includes the handy mnemonic device of "sa shi su se so" (the Japanese hiragana letters that correspond to sugar, salt, vinegar, soy sauce, and miso, the staples of the Japanese kitchen). And kudos for a particularly helpful section on Japanese ingredients with clearly labeled photos to match. There is also a handy bibliography and list of shopping resources (mostly online).

Like Tuttle Publishing's other Asian cookbooks, "My Japanese Table" is designed to fit today's busy lifestyle and includes many main-course recipes that take 30 minutes or less to cook using common (U.S.) supermarket ingredients (both the prep times and cooking times are helpfully included at the top of each recipe). Another bonus is that measurements are given both in metric and imperial measurements; no need to convert if you're cooking overseas.

I just spent six months working in (and cooking my way across) Japan, so I was really looking forward to testing these recipes. First up were the colorful matcha mochi cupcakes. Mochi are sticky pounded rice cakes (no relation to American "rice cakes") traditionally served at New Year's, but variations of mochi are found in many common Japanese desserts. I made the cupcakes as instructed and sprinkled cinnamon on top, but they still needed a little something extra, so I added the matcha frosting from Baked: New Frontiers in Baking. This gave the cupcakes an extra boost of grassy green tea flavor (and color) with a touch of sweetness (see attached photos).

Next up, I tried several of the vegetarian recipes like the Sweet Simmered Mushrooms, Pumpkin Rounds and Japanese Mushroom M�lange with Butter and Soy. In some cases, I found that I had to adjust the cooking time. In the case of the mushroom m�lange, you're instructed to bake 2 pounds of mushrooms for 15 minutes (the cooking time at the top said 20), but I had to bake them for closer to 30 before the mushrooms released their juices. Also, it was difficult to fit two pounds of mushrooms into a 10 x 13 piece of parchment paper as instructed!

I was happy to see that some traditional Japanese desserts were included, mostly focused on mochi, anko (sweet red bean paste), and green tea. You'll find favorites like ichigo daifuku (ripe strawberries wrapped in a layer of bean paste and coated in mochi) and matcha and black sesame ice creams. The chapter is rounded out with instructions on how to prepare several kinds of traditional teas (sencha, matcha, and hojicha).

Debra is a patient teacher (Tuttle has dubbed her "The Julia Child of Japanese cooking") and frequently defers to Japanese colleagues, or includes stories of her life in Japan that makes "My Japanese Table" part cookbook and part travelogue. The book could have benefited from a little extra proofreading (there were several typos in addition to mismatches between stated cooking times, conflicting instructions, etc.), but overall "My Japanese Table" has something to appeal to everyone, from the meat-and-potatoes crowd to vegetarians to kids (there are several cute bento box suggestions aimed specifically at kids and teens).

Great intro to cooking Japanese food

I really enjoyed this book. It was a great combination of her memories and simple versions of Japanese food. I was particularly happy to find a recipe for Black Sesame Seed Pudding--I'd eaten some in Japan, but didn't know what it was. When I saw the recipe, I realized what it had to be. The recipe was easy to follow, too. I also made okinomiaki and they were delicious--just like the ones I had in Japan. The bento section was very helpful, too.
My only problem was, my version is on my Kindle, which is not the best to cook from. A paper copy would be better to bring into the kitchen.

Great recipes and a great read

Debra Samuels' "My Japanese Table" is the first book I've found that approaches the art of Japanese cooking in a way to which I can relate. Her stories about her experiences in Japan could have happened to me. I am Japanese American, but my knowledge of Japanese customs, cooking, and way of life date back to the 1920s when my father immigrated to the US. Today, Japan is a very different place.

Samuels' book gives us a modern Japanese approach to traditional Japanese cooking. The flavors and tastes remind me of my mother's cooking, but without all that work. I was especially happy to find recipes for some of my favorites: Gyoza (Japanese Pot Stickers), Kara-age (Japanese Fried Chicken), and rice bowls and noodles with different toppings. Her clear and easy to follow instructions have opened up a new way for me to approach sushi, a dish that was always too much work and we made it only once a year for our New Year celebration.

I was so impressed with "My Japanese Table" that it was my Christmas present to all members of the next generation of my family, nephews, nieces, cousins, etc. I would recommend this book at anyone who loves Japanese food!

Rex Gooch writes from his personal military experience as a U.S. Army helicopter pilot who served in Vietnam flying Hueys with C Troop, 3rd of the 17th Air Cavalry. Long Awaited look at the makings and life of an American Legend!

As the founder and webmaster of the Vietnam Helicopter Pilot's Association museum website I've had numerous contacts with people who knew and served with Ace Cozzalio. I have spoken to his family members a number of times in order to catch a small glimpse of this bigger then life Army Aviator for presentation in our work and displays. This book is long over-due and a fitting tribute to a genuine American legend. There have been many books written by and about Helicopter veterans but few work so intently on establishing the essence of a complex man and patriot from childhood to his untimely passing. In contrast to today's "by the book" Army, in which individualism is not so welcome, Ace pioneered a path that carried with it the lives and loyalties of many who served under his command and along side him. He dynamically re-introduced the Cavalry uniform of olden times (saber, scarf and "Cav" Hat) to the challenging environment of the Vietnam conflict and not only got away with it but established what was then, at the very least, "Unauthorized" as a tradition that lives on today. There was nothing typical about this man but his is the spirit of many a well known American Warrior. Thanks to author, Rex Gooch, for adding an unforgettable volume to the archives of 20th century military history. A must read for anyone from Aviation Historians to those who research or just appreciate factual studies in leadership.

A book that should be made into a movie!

At a time when there are so few REAL heroes, REAL role models, the true story of Ace Cozzalio is heroically powerful and inspiring. Whereas our media tends to idolize our Hollywood actor “heroes” and over-paid egotistical professional athletes, this is a book of REAL acts of bravery, an exciting and accurate portrayal of a Vietnam War gunship helicopter pilot.

This book does NOT get into the “justification”, the controversies, the politics of the Vietnam War but accurately tells the true story of an American Army pilot doing his job with unbelievable bravery, honor, dedication, pride, and grit...as only an American military person can perform.. This book helps bring out the true but often unrecognized fine character of the American soldier in Vietnam, an unpopular war that in reality was filled with true warriors like Ace Cozzalio.

The author does a fantastic job of making a true story read like a well-written novel. Only Rex Gooch, a decorated Vietnam War Air Calvary gunship helicopter pilot himself, could write so that you feel like you are THERE flying the Loach or Huey helicopter with Ace! . The accurate details of piloting helicopters and flying so very low over the lands of South Vietnam are fantastic.

It is a well-written true story of values and character-building instilled by his parents to amazing action of a low-flying Loach helicopter chasing Viet Cong as if it were A DRAGONFLY CHASING AN ANT (WOW !!!!), to an unbelievable battle saving a pinned down trapped platoon, to the flamboyant pride of old Calvary uniforms, scarfs, Stetson cowboy hats and sabre swords to a classy story of romance with a Donut Dolly!!! Better than fiction!!

Frankly, a “great read”, especially for any man (emphasis intended)!

that's how good it is

From the moment I began reading ACE:THE STORY OF LT.COL.ACE COZZALIO, I could not put it down!. This book is so well written that it is truly a "page turner". I could see the action in the book just as if I was experiencing it myself, that's how good it is. Ace, the man, as the books reveals is more than just a good helicopter pilot. He is an honest, decent and charasmatic leader; a man who exemplifies all that is good about being an American Soldier committed to his duty as he saw it. From page to page I could see the character of a real man; nothing about him was phony. To use a cliche, what you see is what you get. The legend of Ace will live on in the hearts of those who knew him and, through this book, those who read about him.
For anyone who is looking for a hero, I recommend looking at the life of Ace Cozzalio as written in this book. You, the reader, will appreciate the selfless sacrifice our soldiers make in the most horrible situations to keep our country safe. I expect the many veterans of the Vietnam War, and other conflicts, who read this book will treasure it as part of their life as I do. On a scale of one to five, I give this books a 10!

PreSchool-Grade 2 Polacco's first-person voice moves her narrative forward gracefully from the time when her Great-Gramma Anna came to America during the last century to the present. Richly detailed charcoal drawings fill the pages of this beautifully conceived book. Particularly striking are the faces of the Russian Jewish immigrant families who people the pages. The only color used is in the babushka and dress of Great-Gramma Anna, which become part of a brightly hued quilt. Following that quilt through four generations is the basis of this account. Customs and fashions change, but family is constant, visually linked by the ``keeping quilt.'' Children will be fascinated by the various uses to which the quilt is put, although some of those uses make one wonder how its ``like-new'' shape was maintained. That stretch of the imagination is gentle, however, and does not mar the story. Readers who notice that the author and the narrator share the same name may realize that this lovely story is true; that should make it even more appealing. I was lucky to find this book in Spanish, and it meets all of my expectations. The translation is true in style and content to the original and like the English version, is at about a third grade reading level.

Un libro para toda cultura.

This book is truly a book for any culture. I read this book in Spanish to my second grade bilingual class. Many are from other Spanish countries. Not only were they interested in the story, it became quite clear that they had a story to tell of some piece of clothing or an artifact that was being used through the generations in their family. An outstanding story to increase an interest in reading.

About the Author
Cassie Reilly-Boccia was a four-year starter on the Crimson Tide softball team, leading the team to several titles, including a National Championship in 2012. She was inducted to the New York State Softball Hall of Fame as a member of the class of 2015. She's a certified strength and conditioning specialist as well as a USA Weightlifting Sports Performance coach. She's also the director of research and development and intern curriculum at Athletes Warehouse in Pleasantville, New York.

Like many softball phenatics - I am always thinking about ...

I coach at the 12U Travel Level. I started reading this book and it suddenly became the most important thing I had to do today. Like many softball phenatics - I am always thinking about my team and what I can do to make the game better for the players. "Finished It" is a book that gives us a great insite into what it feels like to win at the highest level and how they went about paying everything up front to collect their reward later. It is brilliantly written and filled with passion, honesty and an overwhelming sense to give something back to the game. There are 16 chapters. I believe in this book so much that as I was reading it - I formed one question for each chapter that I thought would help turn our TEAM into a FAMILY. This book is going to be required reading for all of our players before they attend our winter workouts and everybody will have to answer those 16 questions. Thank you Cassie for writing an incredible book and for developing our players as people and athletes. I can not recommend this book any higher. I couldn't put it down.

A must-read for every softball coach, parent, and player!

This book should is a must-read for every softball coach, parent, and player. AND, it's a should-read for everyone else who does not fit into that category. The book extends beyond the sport of softball and beyond the Crimson Tide. It's about teamwork.

The comfortable cadence of each chapter begins with background on the team, and ends with Cassie gradually re-living the day when Alabama won the national championship. It's hard to put down!

One of the main points that sticks out is the importance of each role on a team. Cassie connects many roles to the success of her team. She explains how the championship could not have been won without the fans, the video producer, trainers, coaches, and each athlete, including the Wolfpack sitting on the bench. Every person matters and can find a way to make a difference. This idea relates on and off the field.

I credit Cassie with instilling a passion for the game in my daughter, who was fortunate to have taken lessons with Cassie throughout her stay in Iowa. Cassie is an incredible person, a talented writer, and a heck of a softball player!

"Finished It" by Cassie Reilly-Boccia is excellent read for any fastpitch player, coach or parent (or anyone involved in a team sport or endeavor for that matter). It provides some real insight into the philosophy behind one of the most successful D-1 college softball programs and what it means to be a "team" player in every sense of the word. The book is not just about softball but it has many life lessons which transcend sport and can be applied to all aspects of life. It is well written highly entertaining read. A must read for all fastpitch players and coaches!
